Browned Butter Cookie Bars
Well I’m back on the blog again! Sorry for the lack of blog posts, I was quite busy in school. My first year of college is officially over. I cannot believe how fast time went by! In case you’re wondering, I had a fantastic year. I made so many great friends, grew closer to the Lord, did well in my classes and learned so much! Next year I am going to be a Residents Assistant, so I will be in charge of a dorm hall. I am so excited for this opportunity to get to know many wonderful women of God while learning how to be a Godly leader in the process. I will also be applying to the Nursing Program at my school and Lord willing get in! Needless to say, I have a busy upcoming school year, so I am going to seize the opportunity and make the most of my summer break! One thing I am looking forward to this summer is cooking! I so missed baking and blogging, so I am anxious to start up again. I’ve been really inspired to make healthy and fun recipes, especially things with quinoa and cottage cheese. I’m kind of obsessed with those two things right now. Don’t worry though, I’m still human and have an intense sweet tooth, so those sugary recipes will still be around! Anyways, I’m super excited to be back on my blog again and I cannot wait to share super yummy recipes!
Here is the first recipe of the season, Browned Butter Cookie Bars. Boy these are good. This was a result of my sweet tooth. I had this recipe pinned on my Pinterest and it had been tempting me long enough, so I gave in and made it. I’m SO happy I did! I had never made a “browned butter” recipe before, so this was exciting! The browned butter gave it the perfect mix of sweet and salty. Totally up my alley! After these came out of the oven I immediately ate two, then three, then four. Ya, I didn’t have self control and I even burnt my tongue, because I could not be patient. These bars are so easy and VERY addicting. My mom and I kept going back for more, they’re very dangerous.
Browned Butter Cookie Bars
- 3/4 cup butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 7 ounces semisweet chocolate chips or dark chocolate
Instructions:
Preheat oven to 350 degrees. Add the butter to a small saucepan set over medium heat and cook until it melts. Whisk the butter constantly. It will foam and bubble. Continue whisking until the butter has turned a golden brown color and smells nutty (takes about 10-15 minutes). Remove from the heat, let cool 5 minutes, and add to a large mixing bowl.
Beat the butter and sugars together until well combined. Stir in the egg and vanilla.
In a medium bowl, whisk together the flour, baking soda, and salt. Stir into the butter mixture and mix until well combined. Stir in the chocolate.
Line a 9×13 baking dish with parchment or foil. Press the dough into the prepared pan. Bake for 15 minutes exactly for bars with a gooey, underdone center. Bake a few minutes longer for firmer, more set bars.
Cool for at least 30 minutes before cutting, longer if you don’t want your bars to fall apart.
