Chef Mickey’s: Ham, Potato & Scallion Soup

*yields about 1 gallon


  • 1 stick of butter
  • 1/2 cup all-purpose flour
  • 1 gallon milk
  • 1/8 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 4 tablespoons vegetable seasoning
  • 1 cup onions, diced
  • 2 cups potatoes, peeled and diced
  • 1 cup smoked ham, diced
  • 1/4 cup green onions, sliced


Melt butter in a large stock pot. Stir in flour until it forms a roux. Add in milk, pepper, garlic powder and vegetable seasoning. Stir well using a whisk to remove any lumps. Next, add onions, potatoes and ham. Bring to a boil for 5 minutes then turn down heat and simmer until potatoes are tender.    Ladle into bowls and top with green onions and shredded cheese (optional) to serve. Enjoy with crusty bread or rolls for dipping
