Chicken Parmesan Recipe

This meal is a family favorite and a definite crowd pleaser. You can make it special for Valentine’s Day by cutting your cheese slices in heart shapes.  Visit our Valentine’s Symbols page to learn more about the symbolism and meaning of hearts, as well as the color of red for Valentine’s Day.

Chicken ParmesanIngredients:

6 chicken breasts (boneless, skinless), or 12 chicken tenders
1 cup Italian dressing
1 1/2 cups Italian bread crumbs
3/4 cup shredded parmesan cheese (divided)
1/4 cup olive oil
1/4 cup butter
1 26 oz. jar spaghetti sauce*
6 ounces sliced mozzarella cheese
Spaghetti or angel hair pasta

*We like Prego.

Directions:

1. Dip the chicken in Italian dressing.

2. Place bread crumbs and 1/2 cup parmesan cheese in ziploc bag. Shake chicken in bag to coat.

3. Heat olive oil and butter in a skillet. Lightly brown each side of the chicken on medium heat.

4. Pour spaghetti sauce on the bottom of a 9×13 baking dish. Lay the cooked chicken on top.

5. Bake for 25 minutes at 350 degrees.

6. Use a cookie cutter to cut mozzarella slices into hearts. Place on top of the chicken and then sprinkle with the remaining 1/4 cup parmesan. Bake for an additional 5 minutes or until cheese in melted and bubbling.

7. Serve on top of spaghetti or angel hair pasta.
