Directions

1
Preheat oven to 350F.
Line the baking sheet with parchment paper and set aside.
2
Microwave the mozzarella cheese and cream cheese.
In a bowl, add the mozzarella and cream cheese and microwave for 1 minute Half. Ensure to give the cheese sauce mixture a stir midway through. This will ensure it is completely melted when finished.
3
Mix all to make a nice dough.
Combine the almond flour, garlic powder, Italian seasoning, and egg in the bowl and knead the mixture until a cohesive fat-head dough is formed. Fat-head dough is a highly versatile dough made with ingredients like mozzarella cheese, cream cheese, eggs, and almond flour. It is a popular choice within the keto community due to its flexibility in recreating various traditionally high-carb foods such as bagels, pizza, bread, and more.
4
Divide your dough into 4 servings.
When the dough is well mixed, divide it into 4 sections. Form these individual dough pieces into pretzel shapes. Place these carefully onto the baking sheet. The dough will be sticky, not to worry this is often the texture of low carb dough. If it get too much to get a nice shape, you can roll the dough in between 2 parchment paper.
5
Brush the pretzels with butter.
Melt the butter in a small saucepan. When the pretzels are on the baking sheet, brush them with melted butter and season with garlic powder and Italian seasoning.
6
Bake the pretzels for 15 minutes or until lightly browned.
Place the pretzels in the oven and watch the dough rise. Bake the pretzels for 15 minutes or until they are golden brown.
7
Drizzle some additional melted butter if you desire.
When the pretzels are baked, you can them serve immediately. You can add an egg wash with the remaining egg for more shine. For ours we also brushed it with a garlic butter mixture for extra flavor and hit it with some more seasonings.

Notes

Tools you'll need for recipe:

  • Baking sheet: Using two baking sheets can ensure the pretzel bites have enough space when rising in the oven.
  • Parchment paper: The paper will ensure the pretzel dough mixture does not stick to the baking sheet.
  • Small microwavable mixing bowl: It is important to use a microwave-safe bowl. We don't want any explosions
  • Whisk: Use a whisk to thoroughly mix the dry ingredients with the wet ingredients.
  • Food brush: Use a food brush to spread the extra butter when the pretzels are baked.

Preparation

To make the preparation for these keto pretzels easier, it will help if you ensure the dough remains moist. When the dough becomes dry, it can be tough to handle and you might find it difficult to form the perfect pretzel shape. So work quick!

Storage

Wanting to make this pretzels recipe last longer? We don't blame you, it is a great recipe.

Store the leftover pretzels in airtight containers or plastic wrap in a cupboard. Do not put them in the fridge as the cool temperature can hinder their softness. It is best to keep them away from the sun and inside a room-temperature environment for them to remain soft and chewy.

Serving Suggestions

If you wish to change the flavor of these pretzels, you could add onion powder, cayenne pepper, red pepper flakes, or coarse salt. For more of a treat, you could top the pretzels with melted cheese and they are bound to taste delicious! If you go this route however, do make sure you are watching the macros as cheese can increase the carb count.

Frequently Asked Questions

Are pretzels allowed on the keto diet?

Traditional pretzels are typically made from flour, which is high in carbohydrates. As a result, they are not suitable for a standard ketogenic diet, which emphasizes low-carbohydrate intake.

There are however recipes like ours that demonstrate how to make keto friendly pretzels. These alternatives typically have one thing in common in that they all use low-carb flours such as almond flour or coconut flour. They do this as doing so results in fewer carbohydrates compared to using regular or whole wheat flour.

Can I substitute a different type of cheese instead of mozzarella?

While you could, we would not suggest this. Mozzarella cheese is commonly used in keto dough recipes for several reasons:

Low carbohydrate content: Mozzarella cheese is relatively low in carbohydrates, making it a suitable option for those following a ketogenic diet, which emphasizes low-carb intake. It helps keep the overall carbohydrate content of the dough recipe low.
Melting properties: Mozzarella cheese has excellent melting properties. When heated, it becomes gooey and stringy, which helps create a cohesive texture in the dough. This melted cheese acts as a binding agent, allowing the dough to come together and hold its shape.
Mild flavor: Mozzarella cheese has a mild, creamy flavor that doesn’t overpower other ingredients. This neutrality allows the other flavors in the dough, such as garlic powder and Italian seasoning, to shine through.
Stretchy texture: When melted and combined with other ingredients, mozzarella cheese lends a stretchy texture to the dough. This is particularly desirable for pretzel dough, as it helps give the pretzels a soft and chewy interior.

What can this keto garlic pretzels be paired with?

These are super buttery and flavorful on their own, so you might not need to compliment these pretzels with any dipping sauces. But, if you decide that you want to dip these in something, we highly recommend Rao’s marinara sauce. It is super low in carbs and sugar and it is delicious! Its super flavorful and compliments these pretzels perfectly!
Another option would be to dip these pretzels in a cheese sauce. You can pick up a low carb low sugar cheese dip at your local grocery store, or you can make your own! The cheese sauce from our Keto Mac and Cheese would be a perfect dipping sauce for these keto pretzels! Last but not least you could try dipping in guacamole, olive oil, balsamic vinegar, hummus, or salsa. These are your garlic pretzels so eat them however you choose!

Wrap-Up

While this keto pretzels recipe will make only four pretzels to start, i find this a perfect size to handle as most pretzel keto or otherwise are best consumed immediately. In the past when we wrote about our garlic cheese bread or the keto garlic breadsticks, i could not imagine making more garlic inspired appetizers that would taste as good–well i am glad to be wrong!

Thanks to the almond flour and low-carb cheeses, the total net carbs in these keto pretzels are so low that you could even eat 2 of them! There is nothing more satisfying than these garlic pretzels when you crave something soft, chewy, and garlicky. Enjoying these straight from the oven will no doubt have you going back for more. Their flavor and texture are to die for.
