It’s back-to-school week around here, and our mornings are once again a frenzied flurry of activity as my family rushes around getting ready for the day. To ensure that breakfast doesn’t get lost in the shuffle, I like to blend up a family-sized batch of our favorite smoothies so that everyone is able to grab a healthy breakfast on-the-go. This blueberry muffin smoothie tastes just like my boys’ favorite baked good, and it’s loaded with healthy ingredients – perfect for back-to-school or anytime!

Yields: 3 16 oz. Smoothies

What You’ll Need:

  • 2 cups Milk or Almond Milk
  • 1 cup Vanilla Yogurt or Greek Yogurt, frozen
  • 2 1/2 cups Blueberries, fresh or frozen
  • 1 1/2 cup Old-Fashioned Oats
  • 2 Tbsp. Honey
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Cinnamon
  • Large Handful of Ice

Instructions:

  • Blend all ingredients in a blender until smooth. Serve immediately.

    The recipe works and is good. I’ll make again, but just reading the recipe I could tell that if I halved it, it would still make two servings, and I was right. If you make this recipe as written, you will have yourself a LOT of smoothie, so be prepared to share!

    This is one of the best smoothies I have ever tasted!!! 5 stars for sure! One tip though, if you like cinnamon, then you need to add a little bit more.
