The Best Way to Grill Salmon | 1-Minute Video

Simple Grilled Salmon

Aside from pizza and spaghetti, I’d say that this particular grilled salmon recipe is one of the meals that I prepare most frequently for my family.

It’s my easy go-to when I feel like we need something nutritious, but I don’t want to spend much time in the kitchen. Every boy in my house will clean his plate — no questions asked — which is certainly not always the case with other dinners that I serve.

Any mom that’s trying to please a family of 5 opinionated eaters can understand that it’s a true GEM when you find a healthy recipe that appeals to the whole crew!

Grilled Salmon Seasoning

This is the KEY to the perfect piece of grilled fish, my friends! I never prepare our salmon without using my mom’s all-purpose “House Seasoning,” which is just a simple blend of herbs and kosher salt that works like magic in this recipe.

I have provided the instructions to make your own batch of seasoning, which you can use in this grilled salmon recipe, as well as in a variety of other dishes. We use the seasoning blend on chicken, steak, pasta, green salads, pasta salads, roasted vegetables, homemade Tzatziki sauces, and more!

Trust me and make yourself a big batch so that you can continue to enjoy it with grilled salmon and almost everything else that you prepare this season. Once you have a batch of the all-purpose seasoning sitting on your counter, the rest is easy-peasy!

Is it better to grill salmon in foil or not?

While you can certainly grill salmon in a foil packet, this recipe works best without foil. When fish is in a foil packet, it steams in the trapped moisture, so it doesn’t get any of those crispy, charred edges. We prefer the smoky flavor and the grill marks that can only be achieved when the fish is placed directly on the grill grates. The fish cooks quickly, so it doesn’t have a chance to dry out!

Ingredients

This is just a quick overview of the simple ingredients that you’ll need for our favorite grilled salmon recipe. As always, specific measurements and step-by-step cooking instructions are included in the printable recipe box at the bottom of the post.

  • Skin-on salmon fillets: cut the salmon into individual pieces before grilling (kitchen shears work well for this task). The smaller pieces are easier to flip on the grill, and easier to serve! Farm-raised salmon is totally fine if that’s what’s available.
  • Extra virgin olive oil: helps the seasoning adhere to the fish, prevents the fish from sticking to the grill, and helps the salmon’s exterior crisp.
  • Garlic powder, kosher salt, dried parsley, dried minced onion, dried basil: come together to create the best seasoning for your fish. Use the extra seasoning for grilled veggies, salad, pasta, potatoes, chicken, steak — just about anything!

How to Grill Salmon

An easy grilled salmon fillet is ready from start to finish in about 15 minutes! The detailed directions are included in the recipe card at the bottom of the post, but here’s a quick overview:

  • Slice your salmon fillet into individual pieces before grilling. That will make it much easier to flip! I find that sharp kitchen shears work much better than a knife for cutting through the fish skin.
  • Preheat coals for an outdoor charcoal grill, gas grill, or indoor grill pan to medium heat. I find that cooking the salmon over medium heat (about 350°F-400°F) gives it that delicious, charred exterior while keeping the inside moist and tender.
  • Rub the salmon with olive oil, then sprinkle with the seasoning. This will prevent the fish from sticking to the grill, and it helps to create a crispy exterior.
  • Grill the salmon skin-side up for about 5 minutes, then flip it so that it’s skin side down to finish for about 5 more minutes. The fish is done when it flakes easily with a fork.

Grilled Salmon Temp

While the FDA recommends cooking fish to 145°F, for a flakier, more moist and tender salmon filet, many chefs find that it’s best enjoyed when it’s cooked to medium – 125°F. We don’t usually use a thermometer, but instead look to see that the texture of the fillet flakes easily with a fork and the inside changes from translucent (red or raw) to opaque (pink).

What to Serve with Grilled Salmon

Pair the grilled salmon filets with just about any of your favorite sides. Here are a few options that go well with the seafood supper:

Storage

Leftover grilled salmon will keep in an airtight container in the refrigerator for up to 2 days. 

Cooked salmon can also be frozen for 4-6 months, according to the U.S. Food and Drug Administration. Thaw cooked salmon in the refrigerator or immersed in cold water. Use cooked, thawed salmon in salads or as a substitution for canned salmon in casseroles, pasta dishes, sandwiches, or wraps.

Recipe Variations

  • Instead of the all-purpose seasoning blend shown here, you can season the fish with just kosher salt and black pepper, a little bit of garlic powder, blackened seasoning, or a bbq rub.
  • Scale the recipe to serve your family, cooking as many salmon fillets as you need. For instance, double the ingredients and cook about 3 pounds of fish. When you have a batch of seasoning prepared, it’s easy to make a larger meal.
  • Season the fish with fresh herbs, if available. For instance, instead of dried parsley flakes and dried basil, use minced fresh parsley and fresh basil.
  • Use the same ingredients, but bake the salmon in the oven using these instructions.
  • Prepare grilled salmon sandwiches by serving the fillets on griddled buns with tartar sauce, lettuce, and tomato.

Tips for the Best Grilled Salmon Recipe

Prepare the House Seasoning:

  • Mix ingredients together and store in an airtight container for up to 6 months.

Prepare the Salmon:

  • Rub each piece of salmon with olive oil and sprinkle with house seasoning, to taste (I use about 1 teaspoon of olive oil and ¼ teaspoon of seasoning per piece).

Grill the Salmon:

  • Heat coals, gas grill, or grill pan to medium heat. Place salmon on the grill. Cover and grill over medium heat for about 5 minutes per side (maybe a few more minutes, depending on the thickness of your fish). The salmon is done when it flakes easily with a fork.

        1. Hey, Jason! The carbs, fiber, and sugar are all zero — which is why those facts don’t appear in the nutrition panel. Sorry for any confusion, it just automatically leaves those out if there’s no value above zero. 🙂

          1. I too am wondering about the carb count. For keto. I’ve tried this recipe and it absolutely hit athe spot and was delicious… but since then I’ve gone keto. I’m worried about the brown sugar. Wouldn’t that count as either carbs/added sugar in the nutritional panel.

  2. This sounds really easy! I do not do much grilling though. Could I bake them in the oven instead? What would be my temperature setting and cook time?

    1. Hi, Trish! Yes, you can definitely bake the salmon. I like to cook mine at 425 degrees F for about 15-18 minutes, or until the fish flakes easily with a fork. If you’re using a very thin piece of salmon, it will probably cook even faster. Enjoy!

So many different things! 🙂 I’d say that I use it the most on vegetables — like a green salad, or on oven-roasted vegetables like broccoli, cauliflower, or potatoes (toss with olive oil first, then sprinkle with the seasoning). I also like it on steak, fish, shrimp, chicken, pasta…just about any savory dish!

    I made tonight for my ” not a big fan of fish, in general ” family (i love it , especially Salmon) They

    I am not a huge fan of fish, it my boyfriend is. This is the second time I have prepared salmon. The first time I baked it in the oven and let’s just say… it was a disaster. Yes, we use a 1/4 cup of each, but that gives a larger batch of seasoning that you can save and use for other recipes (another salmon dinner, sprinkle it over salad, use on grilled/roasted veggies, use on chicken, etc.). We just keep a jar of this “house seasoning” on the counter and use it regularly. Hope that helps, and enjoy! 🙂

          1. I just made this recipe using only 2 Tablespoons of each of the seasoning ingredients for 2-1/2 lbs of salmon and it was way more than I needed. I think if you would use just 1 Tablespoon of each, you would still have more than you need for one recipe of salmon.

  11. I don’t have a lid for my grilling pan (came without a lid) can I cook this recipe on my grill pan without a lid?

    1. Yes, you can! But you can also use a big lid from a large pot or Dutch oven if you have one that fits over your pan. That’s what I typically do when I’m grilling inside. 🙂

    1. Hey, Jenn! Yes, you put the salmon directly on the grill grates. I like to brush the grates (or the grill pan) with oil just before placing the fish onto the grill, which helps prevent sticking. The skin also helps hold the fish together and prevents sticking on the grill. For fillets, put them down skinless side first (so fish side first). Space the pieces of fish out a bit so that they cook evenly. Then don’t touch the salmon! The salmon will release itself from the grill when it’s ready. Use a flat spatula to flip the salmon over. A 1-inch-thick piece will cook in about 10 minutes.

        Very delicious salmon. And you can put on the grates if you’re careful. Salmon isn’t as fragile as many other types of fish. Clean and oil your grates first though. Cook first then with the skin side down. When flipping with a metal turner/spatula/lifter I spray it with a little cooking spray prior so the fish slides on, and usually help it along with a pair of tongs. Also, if you’re worried, you can always put it on the grate first and then flip and cook the other side on a piece of Pam-sprayed aluminum foil. Kind of a half grill/half roast method and it works fine. You even still get the grill marks through the foil. I grill mine a little hot at shorter time span as I like salmon dry(roasted) on the outside, flaky in between, but then still a bit less done or rarer in the center that melts in your mouth like butter! Don’t go crazy and burn or anything, but you’re not cooking in an oven either; it’s a grill; it should be hot!

    1. Hi, Natalie! We usually keep it simple and serve it with a salad and some crusty French bread on the side. It also pairs nicely with rice or pesto pasta, dinner rolls, biscuits, roasted asparagus, roasted broccoli, or just about any other veggie. Enjoy!

    So delicious! I also put the rub on chicken for my son who hates fish and it was delicious also. Made a lemon garlic butter sauce to go on top of the fish and grilled asparagus and it was one of the best meals we have had in a long time. Thank you for a great recipe!

    1. Hi, Melissa! I’m glad that you liked it! We use this seasoning with just about everything! It’s great on chicken, it’s nice with shrimp, and it works with fish like halibut, tilapia, tuna, cod, or whatever else you enjoy. We also sprinkle the seasoning with olive oil on vegetables before roasting or sauteeing, or sprinkle it on top of salad. It’s so versatile! 🙂

    It’s not often I follow internet recipes because I’ve been really disappointed in the past with incomplete ingredient lists and/or the taste of the recipe. I bought two salmon fillets the other day and was thinking of ways I could make them “different” from my usual grill pan salmon, oven salmon, etc. I came across your recipe and it sounded complete, so I thought, why not? WOW! I made enough for two pieces and both my daughter and I were pleasantly surprised! The were terrific, moist, flavorful pieces of salmon, perfectly cooked in my cast iron grill pan. I saved your spice list and will make enough for last 6 months! I also never thought to use olive oil to coat the fish. I used Grape Seed oil because it has no taste and it worked too. Thank you!

    Made this on the gas grill tonight for dinner…my husband said this might be the best salmon he’s ever had. Wow! As I’m not fond of garlic on salmon next time I’ll try it without the garlic but keep everything else pretty much the same.     I have recently started cooking fish & other meats ( grew up as a vegetarian & was never exposed to cooking meats) Was very hesitant to cook Salmon but my kids were very keen on doing it at home.     I prepared this recipe on my Smokeless Grill. So simple, yet amazing. My family definitely enjoyed it the first, second. and third time I prepared it. Needless to say I now keep a container of your “House Seasoning” in the spice cabinet.

  25. This worked out great. I didn’t have minced onion so I subbed half the amount of onion powder. My husband and I are doing Whole30 this month, so we were looking for something simple and tasty. We grilled it over charcoal after the flames had died down.     We made this on Easter and all loved it! Even my super picky 10 year old!
    We grilled with the skin on-very easy to remove after. The seasoning was perfect! Since all of the measurements are equal, it was easy to just make a smaller amount of the seasoning if you want to try it before making a big batch. (You will want a big batch-YUM!)

    This was absolutely excellent except I would suggest half the salt. While I love salt, the rub was just a tad too salty for me, and I have high blood pressure so have to watch the sodium content. Otherwise spot on! Cooked it on the grill 5 minutes per side at medium heat. Perfectly done and skin was crispy and enjoyable. Full of flavor! Thanks for the recipe. This one’s a keeper!

    I am having grilled salmon for dinner and I do season it with fresh grinded pepper, smoked paprika, sweet basil and olive oil. I use a BBQ grilling basket. It is so much easier to flip.I spray it first.

      1. A little Mo.terey Jack cheese is also good on zucchini. My kids love it either way….or zucchini boats!

  44. I tried this tonight for the first time using my indoor, smokeless grill, which I’m loving. I reduced the salt in your seasoning blend for health reasons, but went full on with all the other seasonings. I loved it. Plan on using it on other foods besides the salmon. I had Cole slaw as a side. My husband wanted macaroni and cheese, plus I had Three Bean Salad fixed and ready to go. Made a great meal. Thank you.

    My boys love this. I didn’t change a thing. We have it once a week. I use the seasoning now also on Brussels sprouts, asparagus, in pasta and on chicken so far. I even added some to homemade garlic bread and everyone loved it. Thank you for sharing this!!

    1. Hi, Leslie! You don’t need to season the skin, unless you’re planning to eat that (which we never do). Just season the flesh side on top. Enjoy!

      1. Hi, Robin! Yes, you can use the onion powder, but you’ll need to decrease the amount. Onion powder is more potent than the flakes, so you need about 1/3 as much. Enjoy!

    Love this recipe! Very easy and actually one of the best (maybe the best) salmon grilling recipes I’ve tasted. I am on a low sodium diet, so I substituted No Salt for the kosher salt. Always looking for recipes I can easily make low sodium. Thanks so much!!!

    I’m an avid kayak fisherman and recently came home with 5 king salmon and a coho on a recent trip. I’ve never been able to quite nail down cooking salmon in a fashion where I’m actually looking forward to having it more often. I followed this recipe and after the first bite I came to realize the true value of the 25lbs of meat I recently stocked into my freezer, thanks to this amazing recipe. The house seasoning is incredibly good and I cant see myself needing anything else for future salmon grilling. It really is worth making a big batch out of, like recommended in the recipe.

    If you are going to peel off the skin before you plate, try this: cook skin side down first, then after you flip you can peel off the skin very easily and do a last quick turn to get grill marks on the skin side also.

    1. Hi, Corissa! We don’t live in an area where a large variety of fresh seafood is readily available. When we can get there, we love the salmon (or steelhead) from Costco. Other days we just get the farm-raised salmon from our local grocery store. Sometimes we’ll use wild-caught salmon from Butcher Box, too. So basically, whatever we can get our hands on! 🙂

    2. I’m using Loch Duarte from Scotland tonight for this recipe, farm raised. It is so good every time I use it in any recipe, slightly more fatty/oily so it’s hard to dry out from possible overcook. Also, so much better than Atlantic farm raised. It’s like butter and very flavorful. I don’t use wild caught when seasoning Salmon beyond salt and pepper because the star of the show for wild should be the fish IMHO.

    So glad I found this just in time for grilling weather! Made it this past weekend and it was a hit – even with the kiddos. I saw earlier in the comment thread that people were looking for salmon recommendations. My husband and I always comparison shop to find decent prices with this site: https://qualityseafooddelivery.com/salmon/. We ended up finding a really decently priced Sockeye for this meal, and it was absolutely divine! My Costco doesn’t stock salmon, unfortunately, so this has been the next best thing. Cheers!

    This recipe was QUICK, EASY, and DELICIOUS! I had all of the spices for the seasoning on hand so I made the larger seasoning batch for future recipes as was recommended. My entire family enjoyed this recipe. We will definitely make this recipe again.
