Watch me make these Cinnamon Pecan Snowball Cookies from start to finish!

I’ve been wanting to make Snowball cookies for years. They pop up everywhere around the holidays and look so darn cute and dainty. Let me just go ahead and say grab a cup of coffee or hot tea because these snowball cookies compliment them soooo well. As soon as my husband tasted one (five actually) he immediately started a pot of coffee.

Snowball cookies are also called Mexican wedding cookies and Russian tea cakes, but Snowball cookies just seem much more fitting for the wintertime. If you’re new to snowball cookies let me explain the taste and texture. They are a dry cookie,  but very tender and delicate. They have a slight crunch like shortbread and then just melts in your mouth. They are heavenly and something about eating them makes me feel all royal and elegant and stuff.

The flavor of these cinnamon pecan snowball cookies is very light, buttery with a hint of cinnamon and vanilla. The pecans complement the taste beautifully but you could substitute it with your favorite crushed nuts like walnuts or macadamia.  I’ve seen other recipes online use different extracts like lemon or mint to change up the flavor a bit, heck, I ‘ve even seen one with mini chocolate chips and coconut!  I hope to get around to trying those later but for now, it’s all about good ol’ cinnamon, pecans and vanilla! Yum!

What’s even better is that they are so easy to make and only require a few ingredients that you probably already have in your kitchen!

Get the Recipe: Cinnamon Pecan Snowball Cookies

Ingredients
 

  • 1 cup butter, softened
  • 2/3 cup powdered sugar
  • 1/4 teaspoon salt
  • 1-1 1/2 teaspoon cinnamon
  • 2 1/2 teaspoons vanilla extract
  • 2 1/4 cup all-purpose flour
  • 3/4 cup pecans, finely crushed
  • 2 cups powdered sugar

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a large bowl cream together butter and 2/3 cup powdered sugar.
  • Add in flour, salt and cinnamon.
  • Mix until a dough forms.
  • Stir in vanilla and pecans.
  • Scoop out a tablespoon size amount of dough and roll into a ball.
  • Place on a cookie sheet lined with parchment paper.
  • Bake for 10-12 minutes.
  • Place cookies on a cooling rack and cool just until warm enough to handle.
  • Place powdered sugar into a large bowl.
  • Gently toss warm cookies in powdered sugar to coat.
  • When cookies are completely cooled off, toss them again, gently pressing the powdered sugar into the cookie if needed.
  • Enjoy with coffee or hot tea.
