Loaded Healthy Toast with Peanut Butter and Greek Yogurt Spread

Addicted? Yes, I’m addicted to this toast! My mom and I have no joke had this the last four days for breakfast. We are in love. The taste is not only out of this world, but it’s good for you too! The wonderful spread on this toast is the same as the Fruit Dip on my blog. Any peanut butter lover will be in heaven with this spread. It has peanut butter, greek yogurt, cinnamon, and honey in it…yum is right! The bread is key to making this so good, it’s on a sandwich thin, making it perfect and crunchy when toasted. Another perk about using a sandwich thin, is it’s only 5o calories as opposed to using a regular piece of bread which is about 12o calories. On top, there is banana, raisins, walnuts and cinnamon & sugar.  You may be thinking the raisins would be weird on it, but trust me, it’s a must! All these ingredients combined make for a healthy and mouthwatering breakfast.This doesn’t have to be just a breakfast, my mom and I have had it for a snack and even lunch.  Surprisingly, this small breakfast keeps me full until lunch time! I highly recommend this, you won’t be disappointed.

Side Note…I graduate from high school in 4 days!

Ingredients:

Half of a European Sandwich thin toasted

Spread:

  • 1 1/2 tablespoons Greek Yogurt
  • heaping 1/2 tablespoon Peanut Butter
  • 1/2 teaspoon Stevia in the Raw (or sweetener if desired)
  • 1/2 teaspoon Clover Honey
  • Dash of cinnamon

Topping:

  • 1/3 of a banana, sliced
  • 4 walnuts, sliced
  • 1 tablespoon of raisins or less
  • Sprinkle cinnamon and sugar on top

Directions:

Toast bread. Combine ingredients for the spread in a small bowl. Spread out the greek yogurt and peanut butter spread on sandwich thin. Place the toppings on top!

If you don’t have stevia, you can add extra honey to sweeten the yogurt .
