Shrimp Avocado Panini

 

If you like thousand island dressing, shrimp, avocado, tomato, and Swiss cheese…then this sandwich has your name all over it! It is so tasty and full of flavor! We were in Costco and we saw a large and cheap container of  shrimp and we had to have it! I LOVE shrimp and there are so many ways to incorporate shrimp into cooking. We made shrimp linguine, I added it to my salad, we sauteed it with some spinach and I found myself  just eating it with cocktail sauce for a snack. This sandwich was born from some creative thinking and a craving for avocado and shrimp together. This creation is one of my favorites and it’s a definite must whenever we have shrimp around the house. Needless to say I love shrimp and it’s so healthy for you too! It was definitely a treat while it lasted.

Shrimp and Avocado Panini

Makes 1 sandwich

  • 2 Slice of Sourdough bread
  • 1-2 tablespoon of thousand island dressing (depending on how much you like)
  • 1/2 cup of shrimp (or less)
  • 3 slices of tomatoes
  • 4 slices of avocado
  • 1 slice of Swiss cheese
  • Parsley (just a pinch)

Directions:

Combine shrimp, thousand island dressing and parsley in a bowl and mix. Assemble the sandwich starting with the shrimp first and place on a panini grill for 5 mins or until golden. I use a George Foreman grill, but if you don’t have one, you could try to cook it in a regular frying pan.

*you may brush butter on the bread before cooking if you like it crispy, but I didn’t to save calories
