churros with chocolate fudge sauce
a while ago, my beautiful sister-in-law bought me a subscription for the donna hay magazine. i LOVE getting a new magazine with amazing ideas arrive in my letter box every month.
one of my favourite recipes from these magazines is for these delicious churros.
for this recipe, you’ll need…
- 50g butter
- 1 cup water
- 1 teaspoon vanilla extract
- 1 cup plain flour
- 1 tsp baking powder
- 1/4 cup caster sugar
- 2 eggs
- vegetable oil for deep frying
- extra caster sugar and cinnamon for dusting
- for fudge sauce
- 400g dark chocolate
- 1 1/4 cups pouring cream
- 1 tsp vanilla extract
to make the chocolate fudge sauce, place the chocolate, cream and vanilla in a saucepan over low heat and stir until melted and smooth. set aside and keep warm.
place butter, water and vanilla in a saucepan over high heat and bring to the boil, reduce the heat to low. add flour, baking powder, and flour and beat with a wooden spoon until the mixture leaves the sides of the pan. remove from heat. gradually add eggs and beat with an electric mixer until a smooth dough forms.
heat the oil in a large saucepan over medium heat until 180 degrees C. spoon the dough into a piping bag and pipe 10cm lengths of the mixture into the oil in batches. cook for 2-3 minutes or until golden brown and cooked through. drain on absorbent paper. dust with caster sugar and cinnamon. serve with chocolate sauce.
