Disney Halloween Cupcakes: Mickey Mummy Recipe
Mickey Mummy Cupcakes*makes 24 cupcakes
Ingredients:
- 24 standard-size cupcakes (made from a cake mix or your own recipe)
- 2 cups of white frosting (pre-made, store-bought or click HERE for my Buttercream Icing Recipe)
- 48 large marshmallows
- 48 Junior Mints (or chocolate-covered raisins or black jellybeans or any other oval-shaped candies)
- 48 chocolate wafers (or chocolate coins or Mini Oreos or other disc-shaped candies/cookies)
- powdered sugar
Directions:
First, bake cupcakes according to directions on box or recipe. Let cool completely. When cool, frost each cupcake with prepared white frosting. Take a bit of powdered sugar and dust your counter or a cutting board. Place one large marshmallow on top of the sugar and roll it out flat using a rolling pin. Cut the marshmallow into 1/4-inch strips with kitchen scissors or a sharp knife. Do this for all 48 marshmallows. Set aside. It’s time to make our Mickey Mummies. Place 2 chocolate wafers or Mini Oreos on each side of the top part of the cupcake, forming Mickey’s 2 ears. Next, take a sharp knife, cut 2 slits in the upper center of the cupcake for Mickey’s eyes. Insert 1 Junior Mint (or other oval-shaped candy) sideways, into each slit. Next, take 1 of the flattened marshmallow strips and place longways (top to bottom) between the 2 eyes. This will help the candies to stay in place. Now begin placing the other strips randomly across Mickey’s face, pressing the ends into the frosting to secure, until completely covered. Repeat this process for each cupcake. Display your Mickey Mummy cupcakes on Halloween-themed platters and enjoy!!
