Whispering Canyon Cafe: Sausage Gravy
*makes about 3 cups
- 1/2 lb. ground sausage
- 1 tablespoon + 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 1/2 cups milk
- salt & pepper, to taste
Brown sausage with 1 tablespoon of butter in a saucepan, using a spoon to crumble. Add 3 more tablespoons of butter and melt. Sprinkle in flour and stir well to make a roux. Add in milk and turn heat to high. Stir constantly until the mixture is thick and bubbling. Remove from heat and add salt and pepper to taste. Pour over hot biscuits and serve.
