San Angel Inn: Queso Fundido


  • 1/2 pound Muenster Cheese
  • 1/4 pound Chorizo Sausage
  • 6 Flour Tortillas


Grate cheese and set aside. Remove casings from chorizo and place into a skillet. Break up into small pieces and cook until browned. Drain grease. Remove from heat.    Spray a small oven-proof casserole dish with non-stick cooking spray. Spread half the cheese on the bottom of the dish. Top with the cooked chorizo. Now finish off with the remaining cheese. Place under the broiler until cheese is melted and lightly browned. Serve hot with warm tortillas. Also goes great with tortilla chips!
