Sci-Fi Dine-In Theater: 7-Bean Beef Chili


2 pounds ground beef
1 cup assorted heirloom beans
2 bay leaves
1 tablespoon butter
1 medium onion, diced
1/2 cup celery, diced
1 green pepper, diced
1 red pepper, diced
1 garlic clove, minced
2 tablespoons chili powder
2 tablespoons ground cumin
1 1/2 teaspoon garlic powder
1 1/4 teaspoon brown sugar
1 tablespoon oregano
1 tablespoon Kosher salt
1 teaspoon ground black pepper
1 tablespoon ancho chili powder
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
1 tablespoon BBQ sauce
2 1/2 cups diced tomatoes
1/4 cup tomato paste
1 1/4 cups V-8 juice
5 ounces Tillamook cheddar cheese, grated


Cook beans according to package directions, adding 2 bay leaves and 1 teaspoon Kosher salt to water. Drain and set aside.

Melt 1 tablespoon butter in pan. Add beef and cook until browned. Drain fat. Add onions, pepper, celery, garlic, both chili powders, ground cumin, garlic powder, brown sugar, oregano, salt & pepper and cook 20 – 30 minutes at medium heat.

Add the rest of the ingredients (except for beans) and simmer for 1 hour on low heat. Add in cooked beans and raise heat to medium. Cook for another 10 minutes. Serve into bowls and top with tortilla chips, Tillamook cheddar cheese and salsa.
