Quinoa Fiesta Salad

 

I feel like this is really silly to post since it is so simple, but I absolutely love it and people need to experience this goodness! My family was having chicken rice burritos and I didn’t want the calories of the tortilla, sour cream and cheese. I was determined to have something low calorie and a slight bit healthier. So, I threw all this together and viola….a tasty and low calorie dish that is oh so easy! It’s very filling and one serving is about 350-400 calories….score! Also, if you want to put this in a tortilla, it would be excellent (it would be tasty to put it in a tortilla and put it in a panini grill too)!

Quinoa Fiesta Salad

*When I made this, I just made it for myself and my mom so just double or triple the recipe to feed more*

Serves 2

1 cup cooked quinoa

1 teaspoon coconut oil

1 red, yellow or orange bell pepper, sliced

1 roma tomato, diced

1 small avocado, diced

6 ounces cooked chicken (I used brined chicken, but you can use any type of cooked chicken)

Cilantro for garnishing

Salsa

Green Sauce

Fajita Seasoning

Directions:

1. In a sauté pan, on medium heat, melt coconut oil. Add the sliced bell peppers to the pan and sprinkle fajita seasoning on top. Sauté for 5-10 minutes, depending on how crunchy you want, stir frequently. Right before my peppers were done, I added my cooked chicken to the pan to heat it up. Set aside.

2. Cut and dice the tomato and avocado. Set aside.

3. Add the peppers, chicken, tomato, and avocado to the quinoa. Top with cilantro, salsa and green sauce.

Enjoy this easy dish and just double or triple for a larger serving. You can also place this in a tortilla or on top of a salad. This would be a great dish to bring to a party as a side!
